With three simple ingredients, you can make this super easy appetizer. This is one my husband’s favorites. He’d eat the whole plate of them if I let him!
- One bunch thick-stemmed green asparagus
- Boursin Garlic and Herb Cheese (It’s Gluten Free!)
- Approximately 8-10 thinly sliced pieces of Prosciutto
First, wash your asparagus and snap the ends off. The asparagus stalk will have a natural break, which usually takes the last 3 inches off of the stalk. Bring a pot of water to a boiler, and using a steamer, steam the asparagus tips for 2 minutes. You can test them with a fork, but you want them to be al dente (firm, not mushy). When done, immediately plunge the asparagus into ice cold water to stop the cooking. Dry. I usually will put in the refrigerator for a few minutes before rolling.
Take the slices of prosciutto and spread a thin, even layer of the Boursin cheese across the entire slice. Gently roll the prosciutto around the middle of the asparagus, leaving the tip and end out. My preferred way is to roll on a diagonal. Depending on the size of your prosciutto, you may only need half of the slice to cover the stalk, but I try to wrap it so I have gone around twice.
Continue until you’ve wrapped all of your asparagus. And it’s that easy. You’ve made a delicious, crowd-pleasing appetizer for almost any occasion!
