Oatmeal Carmelitas

Few recipes I share will even come close to having the personal meaning that this one does. I’m not a big dessert fan, but this recipe is a personal and family favorite, and is a Christmas tradition! I literally make these only during the holiday season, and they are so delicious!!!

Preheat your oven to 350 degrees. Grease the bottom and sides of a 9 inch square pan.

  • 1 cup All Purpose Flour
  • 1 cup Rolled Oats
  • 3/4 cup firmly packed brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup butter, melted

Combine all of these ingredients in a large bowl to form crumbs. If, after adding the melted butter, it seems too moist, add another tablespoon of flour and oats. Press half of the crumbs into the bottom of the pan. Bake at 350 for 10 minutes.

  • 1 cup semi-sweet chocolate morsels
  • 1/2 chopped walnuts
  • 3/4 cup caramel ice cream topping
  • 3 Tbs all purpose flour

Mix the caramel and the flour. Sprinkle the chocolate morsels and the nuts over the baked crumbs. Then drizzle the caramel mixture over top of the chocolate and nuts. Then sprinkle the remaining crumbs over top, distributing evenly.

Bake at 350 for 15 to 20 minutes until golden brown. Chill bars for easing cutting.

Please continue the amazing tradition my mom shared with me and my family, and share for your holiday celebrations!
